Instructions:
1) Step#1: MARINATING PORK METHOD: First, chop boneless pork in small chunks. Second, combine potato starch, black pepper, Shaoxing, five spice powder and the oyster sauce into a bowl. Add pork chunks and allow it to marinate.
2) Step#2: MAKING CHOW MEIN STIR-FRY SAUCE METHOD: Add oyster sauce, soy sauce and water into a bowl and mix it well.
3) Step#3: COOKING PORK CHOW MEIN METHOD: (Note: I deep fry marinating pork chunks in one cup of cooking oil for 4 to 5 minutes to ensure it is cooked properly. Before I go to the next steps. I drained the cooking oil and use the same pan/skillet.) Put a skillet or wok on medium/high heat (gauge 6). Allow pan to get hot for 30 seconds. Stir fry for one between two minutes, or until the bok choy is cooked properly, and the noodles are coated with sauce evenly. Stir in diced scallion and then finished. Pork Chow Mein is best served right after cooking it.
